When you see "I have 4Gs", remember that the OS takes at least 1G, so what you really have is 3Gs.
I am guessing it's mostly textures, models and audio. In order to keep performance high, they need to cache a lot of data. I don't have a problem with that, I actually welcome a game that takes advantage of more RAM, caching more data. It's a pity that it does not use even more (as far as it can go, up to 16Gs).
Problem is, people with less RAM should also be able to play (and coop with occasional slowdowns due to background caching or paging).
768k is enough for everything!

I wonder what's the memory footprint on consoles...

Regarding the video: a highly compressed flash video is not quite suitable to determine visual quality.
